Avocado Platter

 

AVOCADO TOAST PLATTER: Complete with smashed and seasoned avocado as well as chunky squash puree and whole grain toast from Bubs and Grandmas, we created this platter to build your own avocado toast. Although the toasts here are garnished with parmesan, we can make this platter vegan for you. This is a great option to order with your breakfast with fruit for those who want something outside of eggs and pastries.

Bruchetta Platter

 

BRUSCHETTA PLATTER: Garlicky focaccia is accompanied here with lightly poached carrots with chili pepper and sunflower seeds as one side. Another side is raw shaved zucchini with pumpkin seeds, mint, peas and lemon. The third side is a traditional tomato bruschetta made with whatever local tomatoes we can find (here, for summer, we have tried-colored cherry tomatoes). This is a vegan platter that is a great accompaniment to our Crostini Station for a cocktail party.

Cheese Platter

 

MIDWESTERN DOMESTIC CHEESE PLATTER: This platter was inspired by our chef’s midwestern roots where ham and cheese sandwiches were an everyday after school snack. Here we fancy it up by roasting pasture-raised ham with honey and rosemary and pair it with pepper jack cheese, marinated tomatoes, cucumber speed pickles, honey whole grain mustard, whipped cream cheese, and Bubs and Grandmas polenta bread that has been baked with herbs and butter. This platter is definatively not vegan! It’s great for a football party or casual birthday or pool party with some salads and twice baked potatoes.

Ecology Platter

 

ECOLOGY PLATTER: One more for the vegans! This platter was created for those of us who want our food to be healthy fuel that fills us up. Roasted and raw vegetables sit on a bed of grains with bean puree. This is more of a vegan dish for your buffet than a platter as it requires a plate and absolutely can quantify as a meal. Add roasted chicken or our beef harvest so that you can satisfy your carnivores as well. This platter just helps us to eat less meat by making vegen dishes inspiring and filling. Remember when we used it with the Bruschetta and Avocado Platters for a vegan edible centerpiece HERE? My favorite.

OH, AND PS: This is a small version of our PALEO PLATTER because paleo has been a thing for people calling in. Like Elkie the Chihuahua up there, this platter confuses those of us who are not paleo so it is sort of a secret menu item that we offer. It has meats, boiled eggs, steamed vegetables all with very light seasoning keeping things clean. This is a great addition to any of the other platters that have lots of flare and more flavor complexity. We wanted to serve the paleos out there!
